Okay, this recipe is the only kind of cole slaw that I will eat, I generally am not a big fan of coleslaw, but this one is yummy!!! Hope you like it too!!!!
5 cups shredded cabbage
1/2 cup celery, diced
1/4 cups chopped scallions, using both white and green parts
1/2 cups green peppers, chopped
1/2 cups almonds, chopped and toasted, you may use whole almonds if you’d prefer
1 1/2 cups dried cranberries(raisins can be use in place of cranberries)
DRESSING:
1/2 cups reg or low fat mayo
1 TBSP Sweet pickle relish
1 TBSP Honey
1 TBSP Honey Mustard
salt and pepper to taste
DIRECTIONS: In a large bowl, combine cabbage, celery, green onions, green peppers, almonds and cranberries.
In a separate bowl, combine mayo, relish, honey, honey mustard and salt and pepper and chill until ready to serve. Just before serving, pour dressing over slaw, mix well. This will make approx. ten servings(serving size 1/2 cup)
**This has been a favorite for years in our family. Sometimes I add the yogurt covered cranberries along with or instead of regular cranberries, yummmmm!!!!!
